Ingredients
- 1 pound Italian sausage
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, diced
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- Salt and pepper, to taste
- 1 cup low-sodium chicken broth
- 1 cup long-grain white rice
Directions
- Heat the olive oil in a large skillet over medium heat. Add the sausage and cook until it is browned and cooked through, about 5 minutes. Transfer the sausage to a plate.
- Add the bell peppers, onion, garlic, oregano, basil, red pepper flakes, salt, and pepper to the skillet. Cook, stirring often, until the vegetables are softened, about 5 minutes.
- Add the chicken broth, rice, and cooked sausage to the skillet. Stir to combine and bring to a simmer. Reduce the heat to low, cover, and cook until the rice is cooked through and all of the liquid is absorbed, about 20 minutes.
- Serve the sausage and peppers over the cooked rice and enjoy!
