Ingredients

  • 1 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground black pepper
  • 2 tablespoons of butter, melted
  • 1/2 cup of milk
  • 1/2 cup of cooked sausage, diced
  • 1/2 cup of cooked sweet corn

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, mix together the flour, baking powder, salt, and pepper.
  3. In a small bowl, mix together the melted butter and milk.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  5. Fold in the sausage and sweet corn.
  6. Spoon the batter into a greased 12-cup muffin tin.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  8. Let cool for 5 minutes, then remove from the tin.
