Ingredients
- 1/4 cup olive oil
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 cup red wine vinegar
- 2 tablespoons brown sugar
- 2 tablespoons tomato paste
- 1 teaspoon hot sauce
Directions
- In a medium bowl, whisk together the olive oil, Worcestershire sauce, soy sauce, garlic, black pepper, salt, oregano, basil, and thyme.
- Add the red wine vinegar, brown sugar, tomato paste, and hot sauce. Whisk to combine.
- Place desired amount of steak in a shallow dish or resealable plastic bag. Pour marinade over steak.
- Cover dish or seal bag and refrigerate for at least 30 minutes or up to 8 hours.
- Remove steak from marinade and discard marinade. Grill steak to desired doneness.
- Serve steak with reserved marinade (which has been cooked for at least 5 minutes as a sauce).
Interesting Facts
- Marinating for too long can actually make steak tougher.
- The acid in the marinade (vinegar, citrus juice, etc.) breaks down the proteins, which can make the steak more tender.
- The longer the marinade, the more flavor it will have.
- Be sure to discard the marinade after use, as it can contain bacteria from raw meat.
