Ingredients
1/4 cup olive oil
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon freshly ground black pepper
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 cup red wine vinegar
2 tablespoons brown sugar
2 tablespoons tomato paste
1 teaspoon hot sauce
Directions
In a medium bowl, whisk together the olive oil, Worcestershire sauce, soy sauce, garlic, black pepper, salt, oregano, basil, and thyme.
Add the red wine vinegar, brown sugar, tomato paste, and hot sauce. Whisk to combine.
Place desired amount of steak in a shallow dish or resealable plastic bag. Pour marinade over steak.
Cover dish or seal bag and refrigerate for at least 30 minutes or up to 8 hours.
Remove steak from marinade and discard marinade. Grill steak to desired doneness.
Serve steak with reserved marinade (which has been cooked for at least 5 minutes as a sauce).
Interesting Facts
Marinating for too long can actually make steak tougher.
The acid in the marinade (vinegar, citrus juice, etc.) breaks down the proteins, which can make the steak more tender.
The longer the marinade, the more flavor it will have.
Be sure to discard the marinade after use, as it can contain bacteria from raw meat.
