- 1 cup Saba
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- Preheat the oven to 325°F (165°C).
- Season the lamb shanks with salt and pepper.
- Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Add the lamb shanks and sear until browned on all sides, about 8-10 minutes. Remove the shanks from the pot and set aside.
- In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are slightly softened, about 5 minutes.
- Add the beef broth and Saba to the pot, and bring to a simmer.
- Return the lamb shanks to the pot, cover with a lid, and transfer to the preheated oven.
- Braise the lamb shanks in the oven for about 2.5 - 3 hours, or until the meat is tender and easily pulls away from the bone.
- Remove the pot from the oven and let the lamb shanks rest for a few minutes before serving.
- Serve the Saba-braised lamb shanks with the sauce spooned over the top and garnish with fresh herbs if desired.
- Enjoy!
