Ingredients

  • 4 lamb shanks
  • 4 cloves of garlic
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 2 cups beef broth
  • 1 cup Saba
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 325°F (165°C).
  2. Season the lamb shanks with salt and pepper.
  3. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
  4. Add the lamb shanks and sear until browned on all sides, about 8-10 minutes. Remove the shanks from the pot and set aside.
  5. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are slightly softened, about 5 minutes.
  6. Add the beef broth and Saba to the pot, and bring to a simmer.
  7. Return the lamb shanks to the pot, cover with a lid, and transfer to the preheated oven.
  8. Braise the lamb shanks in the oven for about 2.5 - 3 hours, or until the meat is tender and easily pulls away from the bone.
  9. Remove the pot from the oven and let the lamb shanks rest for a few minutes before serving.
