Ingredients

  • 8 chicken thighs
  • 1 large eggplant
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 4 cloves of garlic
  • 1 can diced tomatoes
  • 1/2 cup pitted kalamata olives
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplant, red bell pepper, yellow bell pepper, and onion into bite-sized pieces.
  3. Place the chopped vegetables and whole garlic cloves on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat.
  4. Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.
  5. While the vegetables are roasting, season the chicken thighs with salt, pepper, dried oregano, dried thyme, and dried rosemary.
  6. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken thighs and cook until they are golden brown on both sides, about 5-6 minutes per side.
  7. Remove the chicken thighs from the skillet and set aside.
  8. In the same skillet, add the diced tomatoes and their juices. Stir in the kalamata olives and bring the mixture to a simmer.
  9. Add the roasted vegetables to the skillet and stir to combine. Nestle the cooked chicken thighs into the vegetable mixture.
  10. Cover the skillet and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  11. Sprinkle the crumbled feta cheese over the top of the chicken and vegetables.
