Ingredients

  • 1 pound ground turkey
  • 1 cup canned pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green chilies
  • 1/4 cup chopped fresh cilantro
  • 12 corn tortillas
  • Salt and pepper to taste
  • 1 cup enchilada sauce
  • Optional toppings: sour cream, sliced avocado, chopped tomatoes, chopped green onions

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent.
  3. Add the ground turkey to the skillet and cook until browned. Season with salt, pepper, cumin, chili powder, paprika, oregano, and cayenne pepper.
  4. Stir in the canned pumpkin puree, diced green chilies, and chopped cilantro. Cook for an additional 2-3 minutes until well combined.
  5. In a separate small saucepan, warm the enchilada sauce over low heat.
  6. Dip each corn tortilla into the warm enchilada sauce to soften. Fill each tortilla with the turkey and pumpkin mixture, then roll it up and place it seam side down in a greased baking dish.
  7. Repeat the process until all the tortillas and filling are used.
  8. Pour any remaining enchilada sauce over the rolled tortillas.
  9. Sprinkle the shredded cheddar cheese evenly over the enchiladas.
  10. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven and let the enchiladas cool for a few minutes before serving.
  12. Serve the Turkey Pumpkin Enchiladas with optional toppings such as sour cream, sliced avocado, chopped tomatoes, or chopped green onions.
  13. Enjoy!
