Ingredients

  • 1 (4-pound) whole chicken
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 lemon, halved

Directions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken with olive oil, salt, pepper, garlic, thyme, paprika, and cayenne pepper. Place lemon halves inside the cavity.
  3. Place chicken in a roasting pan, breast-side up. Roast for 45 minutes, or until a meat thermometer inserted into the thigh reads 165°F (74°C).
  4. Remove from oven and let rest for 10 minutes before serving.
