Ingredients

  • 6 cups diced rhubarb
  • 1/2 cup diced jalapeno pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced celery
  • 1/2 cup white vinegar
  • 1 1/2 cups white sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Directions

  1. In a large bowl, mix together the rhubarb, jalapeno pepper, onion, bell pepper, and celery.
  2. In a medium saucepan, mix together the vinegar, sugar, ginger, and salt. Bring to a boil over medium-high heat, stirring constantly.
  3. Pour the boiling mixture over the rhubarb mixture and stir to combine.
  4. Let the relish cool to room temperature before serving.
