Ingredients

  • 1 cup red lentils
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground ginger
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 1 can of chopped tomatoes
  • 3 cups of vegetable broth
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh cilantro, chopped
  • 1 tablespoon of olive oil
  • 1 tablespoon of lemon juice

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes until the onion is softened.
  2. Add the carrots, bell peppers, cumin, turmeric, coriander, ginger and cayenne pepper, and cook for another 5 minutes.
  3. Add the red lentils, vegetable broth, tomatoes, and salt and pepper, and bring to a boil.
  4. Reduce the heat to low and simmer, stirring occasionally, for 15-20 minutes, until the lentils are tender and the sauce has thickened.
  5. Stir in the parsley and cilantro, and cook for another 5 minutes.
  6. Remove from heat and stir in the lemon juice.
  7. Serve warm and enjoy!
