Ingredients
1 cup red lentils
1 cup diced carrots
1 cup diced bell peppers
1 cup diced onion
2 cloves garlic, minced
1 teaspoon of cumin
1 teaspoon of turmeric
1 teaspoon of ground coriander
1 teaspoon of ground ginger
1/4 teaspoon of cayenne pepper
Salt and pepper to taste
1 can of chopped tomatoes
3 cups of vegetable broth
1/4 cup of fresh parsley, chopped
1/4 cup of fresh cilantro, chopped
1 tablespoon of olive oil
1 tablespoon of lemon juice
Directions
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes until the onion is softened.
Add the carrots, bell peppers, cumin, turmeric, coriander, ginger and cayenne pepper, and cook for another 5 minutes.
Add the red lentils, vegetable broth, tomatoes, and salt and pepper, and bring to a boil.
Reduce the heat to low and simmer, stirring occasionally, for 15-20 minutes, until the lentils are tender and the sauce has thickened.
Stir in the parsley and cilantro, and cook for another 5 minutes.
Remove from heat and stir in the lemon juice.
Serve warm and enjoy!
