Ingredients

  • 1 delicata squash, halved and seeded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper

Directions

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Cut the delicata squash in half lengthwise and scoop out the seeds.
  4. Cut the squash into 1/2-inch (1 cm) thick slices.
  5. In a large bowl, combine the olive oil, garlic powder, oregano, salt, and pepper.
  6. Add the squash slices and toss to coat with the oil and seasonings.
  7. Spread the slices on the prepared baking sheet.
  8. Bake for 15 minutes, flipping the slices halfway through.
