Ingredients
- 1 can black beans, drained and rinsed
- 1/2 cup cooked brown rice
- 1/4 cup cooked soybeans
- 1/4 cup corn kernels
- 1/4 cup diced red bell pepper
- 1/4 cup diced onion
- 1/4 cup bread crumbs
- 2 tablespoons ketchup
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Oil for cooking
Directions
- In a large bowl, mash the black beans with a fork or potato masher until they are mostly broken up.
- Add the cooked rice, soybeans, corn, bell pepper, onion, bread crumbs, ketchup, chili powder, and cumin. Mix until everything is evenly combined.
- Season with salt and pepper to taste.
- Shape the mixture into 4 equal-sized patties.
- Heat a large skillet over medium-high heat and add enough oil to lightly coat the bottom of the pan.
- Add the patties to the pan and cook for 5 minutes per side, or until golden brown and heated through.
- Serve the burgers on buns with your favorite toppings.
