Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup cooked brown rice
  • 1/4 cup cooked soybeans
  • 1/4 cup corn kernels
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1/4 cup bread crumbs
  • 2 tablespoons ketchup
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Oil for cooking

Directions

  1. In a large bowl, mash the black beans with a fork or potato masher until they are mostly broken up.
  2. Add the cooked rice, soybeans, corn, bell pepper, onion, bread crumbs, ketchup, chili powder, and cumin. Mix until everything is evenly combined.
  3. Season with salt and pepper to taste.
  4. Shape the mixture into 4 equal-sized patties.
  5. Heat a large skillet over medium-high heat and add enough oil to lightly coat the bottom of the pan.
  6. Add the patties to the pan and cook for 5 minutes per side, or until golden brown and heated through.
  7. Serve the burgers on buns with your favorite toppings.
