Ingredients

  • 1 (9-inch) unbaked pie crust
  • 2 cups grated zucchini
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 3 eggs, beaten
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup melted butter

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread the grated zucchini in the bottom of the unbaked pie crust.
  3. Sprinkle the Parmesan and mozzarella cheeses on top of the zucchini.
  4. In a medium bowl, whisk together the eggs, cream, Italian seasoning, salt, and pepper. Pour the egg mixture into the pie crust.
  5. Drizzle the melted butter over the top of the pie.
  6. Bake in preheated oven for 45 minutes, or until the center is set and the top is golden brown.
