Ingredients
- 1 (9-inch) unbaked pie crust
- 2 cups grated zucchini
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 3 eggs, beaten
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup melted butter
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Spread the grated zucchini in the bottom of the unbaked pie crust.
- Sprinkle the Parmesan and mozzarella cheeses on top of the zucchini.
- In a medium bowl, whisk together the eggs, cream, Italian seasoning, salt, and pepper. Pour the egg mixture into the pie crust.
- Drizzle the melted butter over the top of the pie.
- Bake in preheated oven for 45 minutes, or until the center is set and the top is golden brown.
