1 pound chicken sausage, cut into bite-size pieces
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
3 cups chicken broth
1 cup Arborio rice
1/2 cup dry white wine
1/2 cup freshly grated Parmesan cheese
Directions
Heat the olive oil in a large skillet over medium heat. Add the onion, bell peppers, and garlic and cook until softened, about 5 minutes.
Add the chicken sausage and cook until browned, about 8 minutes.
Add the oregano and thyme and stir to combine. Add the chicken broth, rice, and wine and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for about 15 minutes, or until the rice is tender.
Stir in the Parmesan cheese and season with salt and pepper to taste. Serve hot.
