- 2 tablespoons olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 cloves garlic, minced
- 1 pound chicken sausage, cut into bite-size pieces
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 3 cups chicken broth
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 1/2 cup freshly grated Parmesan cheese
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion, bell peppers, and garlic and cook until softened, about 5 minutes.
- Add the chicken sausage and cook until browned, about 8 minutes.
- Add the oregano and thyme and stir to combine. Add the chicken broth, rice, and wine and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for about 15 minutes, or until the rice is tender.
- Stir in the Parmesan cheese and season with salt and pepper to taste. Serve hot.
