Ingredients
- 1 (16 ounce) package pierogies
- 1 tablespoon butter
- 1/3 cup diced onion
- 1 (8 ounce) package sliced corned beef, diced
- 1/4 cup Thousand Island dressing
- 1/4 cup shredded Swiss cheese
- 1/4 cup shredded mozzarella cheese
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Bring a pot of salted water to a boil. Add pierogies and cook for 5 minutes. Drain and set aside.
- Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add corned beef and cook until heated through, about 5 minutes more.
- Mix together the Thousand Island dressing, Swiss cheese, and mozzarella cheese in a small bowl. Set aside.
- In a 9x13 inch baking dish, layer half of the pierogies. Top with the corned beef and onion mixture. Spread the cheese mixture over the top. Top with remaining pierogies.
- Bake in preheated oven for 15 minutes, or until cheese is melted and bubbly.
