Coconut Shrimp with Spicy Orange Marmalade Sauce

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 cup orange marmalade
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 teaspoon sriracha sauce
  • 1/4 cup chopped fresh cilantro
  • Vegetable oil, for frying

Directions

  1. In a shallow bowl, combine the coconut, flour, garlic powder, salt, black pepper, and cayenne pepper.
  2. Dip the shrimp in the coconut-flour mixture to coat evenly.
  3. In a medium saucepan over medium heat, combine the orange marmalade, soy sauce, honey, and sriracha sauce and bring to a boil.
  4. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  5. Remove from heat and stir in the cilantro.
  6. In a large skillet over medium-high heat, add enough oil to cover the bottom of the pan.
  7. Fry the shrimp for 2-3 minutes on each side, or until golden and crispy.
  8. Serve the shrimp with the spicy orange marmalade sauce and enjoy!
