Ingredients
1 pound large shrimp, peeled and deveined
1 cup shredded coconut
1 cup flour
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 cup orange marmalade
1/4 cup soy sauce
1/4 cup honey
1 teaspoon sriracha sauce
1/4 cup chopped fresh cilantro
Vegetable oil, for frying
Directions
In a shallow bowl, combine the coconut, flour, garlic powder, salt, black pepper, and cayenne pepper.
Dip the shrimp in the coconut-flour mixture to coat evenly.
In a medium saucepan over medium heat, combine the orange marmalade, soy sauce, honey, and sriracha sauce and bring to a boil.
Reduce heat to low and simmer for 10 minutes, stirring occasionally.
Remove from heat and stir in the cilantro.
In a large skillet over medium-high heat, add enough oil to cover the bottom of the pan.
Fry the shrimp for 2-3 minutes on each side, or until golden and crispy.
Serve the shrimp with the spicy orange marmalade sauce and enjoy!
