Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries, chopped
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in buttermilk and vanilla. Gradually stir the dry ingredients into the wet mixture until just blended.
- Fold in cranberries and walnuts. Pour batter into prepared loaf pan.
- Bake for 40 to 50 minutes in preheated oven, or until a toothpick inserted in the center of the loaf comes out clean.
- Let cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
