Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (4 ounce) can diced green chiles
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ground beef and onion and cook, stirring often, until the beef is no longer pink and the onion is softened, about 5 minutes.
  3. Stir in the garlic, tomatoes, beans, green chiles, chili powder, cumin, oregano, black pepper, salt, and cayenne pepper.
  4. Bring to a simmer, reduce heat to low, cover, and simmer for 25 minutes, stirring occasionally.
  5. Uncover and simmer for an additional 10 minutes, or until the liquid is slightly thickened.
  6. Serve hot.
