Ingredients

  • 1/2 cup (1 stick) cold butter, cut into small cubes
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup cold water
  • 1/2 cup white sugar
  • 1 teaspoon ground cinnamon
  • 2 cups fresh berries (strawberries, raspberries, blueberries, etc.)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold butter, cut into small cubes

Directions

  1. In a large bowl, combine the flour and salt. Cut in the cold butter with a pastry blender or two forks until the mixture resembles coarse crumbs.
  2. Slowly add the cold water and mix until the dough comes together. Knead the dough gently until it forms a ball, then flatten it into a disk. Wrap the disk in plastic wrap and chill in the refrigerator for at least 30 minutes.
  3. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  4. In a medium bowl, mix together the sugar, cinnamon, and cornstarch. Add the berries and mix until evenly coated.
  5. On a lightly floured surface, roll out the dough into a 12 inch circle. Place the dough on the prepared baking sheet. Mound the berry mixture into the center of the dough, leaving a 2 inch border. Dot the top of the berries with the remaining butter.
  6. Fold the edges of the dough up over the filling, pleating the dough as you go. Bake for 35 to 40 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Let cool before serving.
