Ingredients
2 tablespoons olive oil
1 onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes
1 cup long-grain white rice
2 cups chicken broth
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cans (6 ounces each) tuna, drained and flaked
Directions
Preheat oven to 350°F.
Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic, and sauté until vegetables are soft, about 5 minutes.
Add tomatoes, rice, chicken broth, oregano, red pepper flakes, salt, and black pepper. Bring to a boil, reduce heat, and simmer for 15 minutes.
Stir in tuna and transfer to a 9x13 inch baking dish.
Bake for 15-20 minutes, or until rice is tender and liquid is absorbed.
