Ingredients
- 2 lbs. red potatoes, diced
- 1/2 cup celery, diced
- 1/2 cup red onion, diced
- 1/4 cup mayonnaise
- 2 tablespoons white vinegar

Directions
- In a large pot, bring water to a boil over high heat.
- Add potatoes and boil for 10 minutes or until potatoes are tender.
- Drain water and let potatoes cool.
- In a large bowl, combine potatoes, celery, and onion.
- In a small bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
- Pour dressing over potato mixture and gently stir to combine.
- Refrigerate for at least 1 hour before serving.
