Ingredients
1 pound asparagus, ends trimmed
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 cup toasted almonds, chopped
2 cups mixed greens
1/4 cup crumbled feta cheese
Directions
Preheat the oven to 375 degrees Fahrenheit.
Spread the asparagus out on a baking sheet. Drizzle with 2 tablespoons of the olive oil, and sprinkle with 1/4 teaspoon of the salt.
Roast for 8 to 10 minutes, or until the asparagus is tender. Remove from oven and let cool.
In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper. Set aside.
In a large bowl, combine the roasted asparagus, almonds, greens, feta, and dressing. Toss gently to combine.
Serve immediately.
