Ingredients

  • 1 pound asparagus, ends trimmed
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup toasted almonds, chopped
  • 2 cups mixed greens
  • 1/4 cup crumbled feta cheese

Directions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Spread the asparagus out on a baking sheet. Drizzle with 2 tablespoons of the olive oil, and sprinkle with 1/4 teaspoon of the salt.
  3. Roast for 8 to 10 minutes, or until the asparagus is tender. Remove from oven and let cool.
  4. In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper. Set aside.
  5. In a large bowl, combine the roasted asparagus, almonds, greens, feta, and dressing. Toss gently to combine.
  6. Serve immediately.
