Ingredients

  • 6 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sugar
  • Pinch of salt
  • 1/4 teaspoon smoked paprika
  • Red and blue food coloring
  • Fresh chives, for garnish

Directions

  1. Cut the eggs in half lengthwise and remove the yolks to a medium bowl.
  2. Add the mayonnaise, mustard, vinegar, sugar, and salt to the yolks and stir to combine.
  3. Divide the mixture into three small bowls. To one bowl, add a few drops of red food coloring and stir to combine. To the second bowl, add a few drops of blue food coloring and stir to combine.
  4. Scoop the mixtures into separate resealable bags. Snip the corner of each bag and pipe the mixtures into the egg white halves.
  5. Sprinkle the paprika over the egg whites. Garnish with chives, if desired.
  6. Serve immediately.
