Ingredients

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 pound baby carrots, trimmed and halved
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt

Directions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, combine the Brussels sprouts, baby carrots, olive oil, brown sugar, pepper, and salt. Toss until the vegetables are evenly coated with the mixture.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Bake in preheated oven for 20 minutes, stirring once halfway through.
  5. Serve warm.
