Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 2 bunches of asparagus, cut into 1/2 inch pieces
  • 1/2 cup heavy cream
  • 2 tablespoons freshly chopped parsley

Directions

  1. Set the Instant Pot to the sauté setting. Heat the olive oil and add the onion and garlic. Cook for 3-4 minutes, stirring occasionally.
  2. Add the thyme, pepper and flour, stirring until the flour is fully incorporated. Cook for 1 minute.
  3. Add the broth and asparagus. Lock the lid in place and make sure the vent is closed. Set the Instant Pot to the soup setting for 5 minutes.
  4. When the cooking cycle is complete, quick-release the pressure. Remove the lid and stir in the cream.
  5. Using an immersion blender, blend the soup until it reaches your desired consistency. Serve hot, garnished with parsley.
