Ingredients
- 1 lb. of your favorite pasta
- 3 red peppers, roasted and peeled
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 1/2 cup of Parmesan cheese, grated
- 1/4 cup of fresh basil, chopped
- Salt and pepper to taste
Directions
- Cook the pasta according to package instructions.
- In a food processor, combine the roasted red peppers, olive oil, garlic, Parmesan cheese, and basil. Blend until smooth.
- Add the pesto to the cooked pasta and mix until well combined.
- Add salt and pepper to taste.
- Serve and enjoy!
