My Mexican Beef

Ingredients

  • 1 tablespoon of olive oil
  • 1 pound of ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of oregano
  • 1 can (14.5 ounces) of diced tomatoes, undrained
  • 1 can (14.5 ounces) of beef broth
  • 1 can (15 ounces) of black beans, rinsed and drained
  • 1 can (4 ounces) of chopped green chiles
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the ground beef and cook, stirring occasionally, until it is browned. Drain off any excess fat.
  2. Add the onion and garlic and cook for 2 minutes, stirring frequently.
  3. Add the cumin, chili powder, oregano, tomatoes, beef broth, beans, chiles, and salt and pepper. Stir to combine.
  4. Bring the mixture to a boil and then reduce the heat to low. Simmer for 20 minutes, stirring occasionally, until the stew has thickened.
  5. Taste and adjust the seasoning if necessary. Serve warm.
