Ingredients
- 1 mango, peeled and diced
- 1 head of lettuce, shredded
- 2 carrots, shredded
- 1 cucumber, peeled and diced
- 8 spring roll wrappers
- Vegetable oil, for frying
Directions
- In a bowl, mix together the diced mango, lettuce, carrots, and cucumber.
- Lay a spring roll wrapper on a flat surface. Place a few tablespoons of the mango mixture in the middle of the wrapper.
- Fold the bottom of the wrapper up over the filling, then fold in the sides, and roll up the wrapper.
- Repeat with the remaining wrappers and filling.
- Heat the vegetable oil in a pan over medium-high heat. Place the spring rolls in the oil and fry for a few minutes, until golden brown.
- Serve the spring rolls with your favorite dipping sauce.
