Ingredients

  • 1 mango, peeled and diced
  • 1 head of lettuce, shredded
  • 2 carrots, shredded
  • 1 cucumber, peeled and diced
  • 8 spring roll wrappers
  • Vegetable oil, for frying

Directions

  1. In a bowl, mix together the diced mango, lettuce, carrots, and cucumber.
  2. Lay a spring roll wrapper on a flat surface. Place a few tablespoons of the mango mixture in the middle of the wrapper.
  3. Fold the bottom of the wrapper up over the filling, then fold in the sides, and roll up the wrapper.
  4. Repeat with the remaining wrappers and filling.
  5. Heat the vegetable oil in a pan over medium-high heat. Place the spring rolls in the oil and fry for a few minutes, until golden brown.
  6. Serve the spring rolls with your favorite dipping sauce.
