Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 clove garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup white wine
  • 1 tablespoon tomato paste
  • 1/2 cup vegetable broth
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley, for garnish
  • 4 cups cooked egg noodles, for serving

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until softened, about 5 minutes.
  2. Add the mushrooms, thyme, smoked paprika, pepper, and salt and cook, stirring, for another 5 minutes.
  3. Add the wine and tomato paste and stir to combine. Cook for another 2 minutes.
  4. Add the broth and bring to a simmer. Cook for another 5 minutes.
  5. Add the sour cream and stir until combined. Simmer for another 5 minutes or until the sauce has thickened.
  6. Serve over the cooked egg noodles and garnish with parsley.
