Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 clove garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup white wine
- 1 tablespoon tomato paste
- 1/2 cup vegetable broth
- 1/2 cup sour cream
- 2 tablespoons chopped fresh parsley, for garnish
- 4 cups cooked egg noodles, for serving
Directions
- Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until softened, about 5 minutes.
- Add the mushrooms, thyme, smoked paprika, pepper, and salt and cook, stirring, for another 5 minutes.
- Add the wine and tomato paste and stir to combine. Cook for another 2 minutes.
- Add the broth and bring to a simmer. Cook for another 5 minutes.
- Add the sour cream and stir until combined. Simmer for another 5 minutes or until the sauce has thickened.
- Serve over the cooked egg noodles and garnish with parsley.
