Ingredients

  • 3 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 2 cups shredded cooked chicken
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • 1/2 cup heavy cream
  • 1 cup self-rising flour
  • 1/2 cup buttermilk

Directions

  1. Melt the butter in a large pot over medium-high heat. Add the onion, carrots, and celery, and cook until softened, about 5 minutes.
  2. Add the garlic and cook for an additional minute. Add the flour and stir to combine. Cook for 1 minute.
  3. Pour in the chicken broth and stir to combine. Add the thyme, oregano, bay leaf, and salt. Bring to a boil, reduce the heat to low, and simmer for 10 minutes.
  4. Add the cooked chicken, frozen peas, and parsley. Stir to combine. Cook for an additional 5 minutes.
  5. Add the heavy cream and stir to combine. Simmer for 5 minutes.
  6. In a separate bowl, combine the self-rising flour and buttermilk and stir until a soft dough forms. Drop the dough by tablespoonfuls into the simmering liquid.
  7. Cover and simmer until the dumplings are cooked through, about 10 minutes. Serve hot.
