Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 can (15 oz) red beans, drained and rinsed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup diced scallions
  • 1/4 cup sour cream, optional

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the oregano, paprika, cayenne, cumin, pepper, and salt. Stir to combine and cook for 1 minute.
  3. Add the red beans and rice and stir to combine. Add the chicken broth and bring to a boil.
  4. Reduce the heat to low and simmer, covered, for 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove from the heat and let stand for 5 minutes. Fluff with a fork and serve topped with the scallions and a dollop of sour cream, if desired.
