Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 can (15 oz) red beans, drained and rinsed
1 cup long-grain white rice
2 cups chicken broth
1/4 cup diced scallions
1/4 cup sour cream, optional
Directions
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the oregano, paprika, cayenne, cumin, pepper, and salt. Stir to combine and cook for 1 minute.
Add the red beans and rice and stir to combine. Add the chicken broth and bring to a boil.
Reduce the heat to low and simmer, covered, for 20 minutes, or until the rice is tender and the liquid is absorbed.
Remove from the heat and let stand for 5 minutes. Fluff with a fork and serve topped with the scallions and a dollop of sour cream, if desired.
