Ingredients
1/2 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sweetened shredded coconut
Directions
Preheat oven to 350°F (175°C). Grease an 8x8 inch baking pan.
In a medium bowl, cream together butter and brown sugar until light and fluffy. Stir in vanilla.
In a separate bowl, whisk together flour, baking powder, and salt. Stir into creamed mixture until just blended. Stir in coconut.
Spread mixture evenly in the prepared pan. Bake for 25 to 30 minutes, or until golden brown. Cool in pan before cutting into bars.
