Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 cup buttermilk
  • Filling of your choice (fruit, jam, etc.)

Directions

  1. In a medium bowl, mix the flour, baking powder, baking soda, and salt.
  2. Cut the shortening into the flour mixture until it resembles coarse crumbs.
  3. Add the buttermilk and mix until the dough is moist and forms a ball.
  4. On a lightly floured surface, roll the dough out to about 1/4-inch thickness.
  5. Cut out circles with a biscuit cutter or a glass.
  6. Place a teaspoon of the filling of your choice in the center of each circle.
  7. Fold the dough over the filling and press the edges together with a fork to seal.
  8. Heat a skillet over medium-high heat and add enough oil to cover the bottom of the pan.
  9. Fry the pies until golden brown and the filling is bubbly, about 2 minutes per side.
  10. Remove from the heat and let cool slightly before serving.
