Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 cup buttermilk

Directions
- In a medium bowl, mix the flour, baking powder, baking soda, and salt.
- Cut the shortening into the flour mixture until it resembles coarse crumbs.
- Add the buttermilk and mix until the dough is moist and forms a ball.
- On a lightly floured surface, roll the dough out to about 1/4-inch thickness.
- Cut out circles with a biscuit cutter or a glass.
- Place a teaspoon of the filling of your choice in the center of each circle.
- Fold the dough over the filling and press the edges together with a fork to seal.
- Heat a skillet over medium-high heat and add enough oil to cover the bottom of the pan.
- Fry the pies until golden brown and the filling is bubbly, about 2 minutes per side.
- Remove from the heat and let cool slightly before serving.
