Ingredients
- 1 Package of Falafel Mix
- 1/2 Cup of Water
- 1/2 Cup of Olive Oil
- 1/4 Cup of Red Wine Vinegar
- 1/4 Cup of Chopped Parsley
- 1/4 Cup of Chopped Cilantro
- 1/4 Cup of Chopped Mint
- 1/2 Teaspoon of Ground Cumin
- 1/2 Teaspoon of Salt
- 1/4 Teaspoon of Pepper
- 3 Cups of Chopped Romaine Lettuce
- 1/2 Cup of Chopped Tomatoes
- 1/2 Cup of Chopped Cucumber
- 1/2 Cup of Chopped Red Onion
- 1/2 Cup of Chopped Kalamata Olives
- 1/2 Cup of Crumbled Feta Cheese
Directions
- In a medium bowl, mix together the falafel mix and water until combined. Form into small balls and set aside.
- In a small bowl, whisk together the olive oil, red wine vinegar, parsley, cilantro, mint, cumin, salt and pepper to make the dressing.
- In a large bowl, combine the lettuce, tomatoes, cucumber, red onion, olives and feta cheese.
- Heat a large skillet over medium-high heat. Add the falafel balls and cook for 5-7 minutes until browned and cooked through.
- Add the cooked falafel to the salad and toss with the dressing. Serve immediately.
