Directions
In a medium bowl, mix together the falafel mix and water until combined. Form into small balls and set aside.
In a small bowl, whisk together the olive oil, red wine vinegar, parsley, cilantro, mint, cumin, salt and pepper to make the dressing.
In a large bowl, combine the lettuce, tomatoes, cucumber, red onion, olives and feta cheese.
Heat a large skillet over medium-high heat. Add the falafel balls and cook for 5-7 minutes until browned and cooked through.
Add the cooked falafel to the salad and toss with the dressing. Serve immediately.
