In a large pot, combine the apple cider, water, salt, brown sugar, pepper corns, bay leaves, allspice berries, juniper berries, and fresh rosemary.
Bring the mixture to a boil over high heat, stirring to dissolve the salt and sugar. Remove from heat.
Add the onion and garlic to the brine and let cool to room temperature.
Place the turkey in a large container and pour the cooled brine over the turkey, making sure the entire turkey is submerged. Cover and refrigerate overnight.
The next day, remove the turkey from the brine and discard the brine. Rinse the turkey under cold running water.
