Ingredients

  • 1 package of graham crackers (8-10 ounces)
  • 2 tablespoons of sugar
  • 1/2 teaspoon of cinnamon
  • 6 tablespoons of melted butter
  • 3 packages of cream cheese (8 ounces)
  • 1 cup of sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of almond extract
  • 1/4 cup of heavy cream
  • 1/2 cup of raspberry preserves
  • 1/2 cup of whipped cream

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a food processor, pulse the graham crackers, sugar, and cinnamon until finely ground.
  3. Add the melted butter and pulse until combined.
  4. Press the mixture into the bottom and sides of a 9-inch springform pan.
  5. Bake for 10 minutes. Set aside and let cool.
  6. In a large bowl, mix together the cream cheese and sugar until smooth.
  7. Add the eggs one at a time, mixing after each one.
  8. Stir in the vanilla and almond extracts.
  9. Pour the mixture into the prepared pan and bake for 30 minutes.
  10. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 30 minutes.
  11. Remove from the oven and let cool completely.
  12. In a medium bowl, whisk together the heavy cream and raspberry preserves until smooth.
  13. Spread the mixture evenly over the top of the cooled cheesecake.
  14. Top with the whipped cream and refrigerate for at least 2 hours.
  15. Serve chilled.
