Ingredients

  • 1 lb. catfish fillets, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 3 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1/2 cup heavy cream
  • 1 cup shredded cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
  2. Add the flour and cook for 1 minute, stirring constantly.
  3. Add the chicken broth, thyme, smoked paprika, and cayenne pepper. Increase the heat to high and bring to a boil.
  4. Add the catfish chunks, reduce heat to low and simmer for 10 minutes.
  5. Add the heavy cream and cheese and stir until the cheese is melted. Simmer for an additional 5 minutes.
  6. Season with salt and pepper, to taste. Serve hot, garnished with fresh parsley.
