Ingredients
- 1 lb. catfish fillets, cut into chunks
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 3 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1/2 cup heavy cream
- 1 cup shredded cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Directions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
- Add the flour and cook for 1 minute, stirring constantly.
- Add the chicken broth, thyme, smoked paprika, and cayenne pepper. Increase the heat to high and bring to a boil.
- Add the catfish chunks, reduce heat to low and simmer for 10 minutes.
- Add the heavy cream and cheese and stir until the cheese is melted. Simmer for an additional 5 minutes.
- Season with salt and pepper, to taste. Serve hot, garnished with fresh parsley.
