Ingredients
1 lb. catfish fillets, cut into chunks
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 tablespoons all-purpose flour
3 cups chicken broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon cayenne pepper
1/2 cup heavy cream
1 cup shredded cheese

Directions
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
Add the flour and cook for 1 minute, stirring constantly.
Add the chicken broth, thyme, smoked paprika, and cayenne pepper. Increase the heat to high and bring to a boil.
Add the catfish chunks, reduce heat to low and simmer for 10 minutes.
Add the heavy cream and cheese and stir until the cheese is melted. Simmer for an additional 5 minutes.
Season with salt and pepper, to taste. Serve hot, garnished with fresh parsley.
