Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the lemon zest.
  5. In a separate bowl, sift together the flour, baking powder and salt.
  6. Gradually add the dry ingredients to the creamed mixture, stirring until just combined.
  7. Fold in the raisins.
  8. Drop the dough by rounded teaspoons onto an ungreased cookie sheet.
  9. Bake for 10-12 minutes, or until golden brown.
  10. Cool on the cookie sheet for 2 minutes before transferring to a wire rack to cool completely.
