1 cup (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup whole milk
Assorted food coloring
2 tablespoons rainbow sprinkles
1/2 cup rainbow nonpareils
Directions
Preheat oven to 350°F. Grease a 9-inch round cake pan with butter. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
Alternately add the dry ingredients and the milk to the butter mixture, beginning and ending with the dry ingredients. Beat until just combined.
Divide the batter into 6 separate bowls. Add a few drops of food coloring to each bowl and mix until desired color is achieved.
Pour each color of batter into the prepared pan, spreading it out evenly. Sprinkle the top of the cake with rainbow sprinkles and rainbow nonpareils.
Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool completely before serving.
