Ingredients
- 1 pound fresh white fish, such as cod or haddock, cut into 1-inch cubes
- 1 pound shrimp, peeled and deveined
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup fresh cilantro, chopped
- 1 (14 ounce) can coconut milk
- 1/4 cup freshly squeezed lime juice
Directions
- In a large pot over medium heat, sauté the onion and garlic in a tablespoon of olive oil for about 5 minutes, or until the onions are translucent.
- Add the cumin, red pepper flakes, paprika, salt and black pepper and cook for another minute.
- Add the diced tomatoes and simmer for 10 minutes.
- Add the fish and shrimp and cook for a few minutes until they start to turn pink.
- Stir in the cilantro, coconut milk, and lime juice and simmer for another 10 minutes.
- Serve hot with white rice or warm crusty bread.
