Zucchini Pasta with Peas and Kale Pesto

Ingredients

  • 1 lb zucchini noodles
  • 1/2 cup frozen peas
  • 1/4 cup olive oil
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 2 cloves garlic
  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. In a large pot, cook the zucchini noodles according to package instructions. Drain and set aside.
  2. In a food processor, combine the peas, olive oil, basil, parsley, garlic, pine nuts, Parmesan cheese, salt and pepper. Pulse until the mixture is smooth.
  3. In the same pot, add the zucchini noodles and the pesto. Cook over low heat for 5 minutes, stirring occasionally.
  4. Serve warm.
