Ingredients
- 1 lb zucchini noodles
- 1/2 cup frozen peas
- 1/4 cup olive oil
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley leaves
- 2 cloves garlic
- 1/4 cup toasted pine nuts
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Directions
- In a large pot, cook the zucchini noodles according to package instructions. Drain and set aside.
- In a food processor, combine the peas, olive oil, basil, parsley, garlic, pine nuts, Parmesan cheese, salt and pepper. Pulse until the mixture is smooth.
- In the same pot, add the zucchini noodles and the pesto. Cook over low heat for 5 minutes, stirring occasionally.
- Serve warm.
