Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/2 cup white wine
- 2 green bell peppers, seeded and chopped
- 1 (14.5 ounce) can diced tomatoes
- 4 cups beef broth
- 1/4 cup uncooked white rice
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and cook until the onion is tender, about 5 minutes.
- Add the ground beef and cook, stirring occasionally, until the beef is no longer pink, about 10 minutes.
- Stir in the salt, pepper, oregano, basil, and thyme, and cook for 1 minute.
- Pour in the white wine and cook for 2 minutes.
- Stir in the green bell peppers, diced tomatoes, and beef broth, and bring to a boil.
- Reduce heat to low and simmer for 20 minutes.
- Stir in the rice and continue to simmer for an additional 15 minutes, or until the rice is cooked.
