Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/2 cup white wine
  • 2 green bell peppers, seeded and chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 4 cups beef broth
  • 1/4 cup uncooked white rice

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and cook until the onion is tender, about 5 minutes.
  3. Add the ground beef and cook, stirring occasionally, until the beef is no longer pink, about 10 minutes.
  4. Stir in the salt, pepper, oregano, basil, and thyme, and cook for 1 minute.
  5. Pour in the white wine and cook for 2 minutes.
  6. Stir in the green bell peppers, diced tomatoes, and beef broth, and bring to a boil.
  7. Reduce heat to low and simmer for 20 minutes.
  8. Stir in the rice and continue to simmer for an additional 15 minutes, or until the rice is cooked.
