Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 pound radish tops, chopped
  • 1 cup vegetable broth
  • 1 cup half and half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, garlic, thyme, oregano, and bay leaf. Cook for 5 minutes, stirring occasionally.
  3. Add the radish tops and cook for 3 minutes, stirring occasionally.
  4. Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
  5. Add the half and half, salt, and pepper. Simmer for an additional 5 minutes.
  6. Remove from heat and discard the bay leaf. Serve hot.
