Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 pound radish tops, chopped
- 1 cup vegetable broth
- 1 cup half and half
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, garlic, thyme, oregano, and bay leaf. Cook for 5 minutes, stirring occasionally.
- Add the radish tops and cook for 3 minutes, stirring occasionally.
- Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
- Add the half and half, salt, and pepper. Simmer for an additional 5 minutes.
- Remove from heat and discard the bay leaf. Serve hot.
