Roast Chicken with Thyme and Onions
Ingredients
2 tablespoons olive oil
1 onion, diced
2 carrots, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
1 pound radish tops, chopped
1 cup vegetable broth
1 cup half and half
1 teaspoon salt
1/2 teaspoon black pepper
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion, carrots, garlic, thyme, oregano, and bay leaf. Cook for 5 minutes, stirring occasionally.
Add the radish tops and cook for 3 minutes, stirring occasionally.
Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
Add the half and half, salt, and pepper. Simmer for an additional 5 minutes.
Remove from heat and discard the bay leaf. Serve hot.
