Ingredients

  • 1 whole rabbit, about 2-3 lbs.

Directions

  1. In a large skillet, heat the olive oil over medium heat.

  3. Add the rabbit to the skillet and brown on all sides, about 5 minutes.
  4. Add the diced tomatoes, white wine, oregano, basil, thyme, salt, and pepper to the skillet and stir to combine.
  5. Cover the skillet and reduce the heat to low. Simmer for 25-30 minutes, until the rabbit is cooked through and tender.
