Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) package soy chorizo
  • 1/2 cup vegetable broth
  • 1/4 cup red wine
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the tomato paste, oregano, basil, and red pepper flakes and cook for 1 minute.
  3. Add the diced tomatoes, soy chorizo, vegetable broth, and red wine. Stir to combine and bring to a simmer. Simmer for 20 minutes, stirring occasionally.
  4. Taste and season with salt and pepper as needed.
  5. Serve over your favorite noodles, polenta, or potatoes.
