Ingredients

  • 3 large eggs
  • 2 tablespoons milk
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped spinach
  • 1/4 cup chopped tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

  1. In a medium bowl, beat eggs with milk until well blended.
  2. Heat the olive oil in a medium skillet over medium-high heat.
  3. Add the egg mixture to the skillet and cook, stirring occasionally, until the eggs are almost set.
  4. Add the feta, spinach and tomatoes and cook until the eggs are completely set.
  5. Season with salt and pepper to taste.
  6. Serve hot.
