Ingredients

  • 4 slices of bread
  • 4 tablespoons of butter
  • 1/2 cup of Kalamata olives, pitted and chopped
  • 1/2 cup of cherry tomatoes, halved
  • 1/2 cup of shredded mozzarella cheese
  • Salt and pepper, to taste

Directions

  1. Heat a large skillet over medium heat.
  2. Spread the butter on one side of each slice of bread.
  3. Place two slices of bread, butter side down, in the skillet.
  4. Sprinkle the olives, tomatoes, and cheese over one slice of bread.
  5. Season with salt and pepper, to taste.
  6. Top with the remaining slice of bread, butter side up.
  7. Cook for 4-5 minutes, or until golden brown and cheese is melted.
  8. Carefully flip the sandwich and cook for an additional 4-5 minutes, or until golden brown.
  9. Slice in half and serve.
