2 pounds of pork shoulder or pork belly, cut into 2-inch cubes
2 tablespoons of olive oil
2 tablespoons of garlic, minced
2 tablespoons of ginger, minced
2 tablespoons of fish sauce
2 tablespoons of tamarind paste
2 tablespoons of brown sugar
3 cups of vegetable broth
1 onion, chopped
1 bell pepper, chopped
1 tomato, chopped
2 tablespoons of fresh parsley, chopped
Salt and pepper to taste
Directions
Heat the olive oil in a large pot over medium heat.
Add the pork cubes and cook until golden brown, about 5 minutes.
Add the garlic, ginger, fish sauce, tamarind paste, and brown sugar. Stir to combine.
Add the vegetable broth, onion, bell pepper, tomato, parsley, and salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot with cooked white rice.
