Ingredients

  • 1 cup uncooked quinoa
  • 2 cups chicken broth
  • 1 can tuna, drained
  • 1 cup frozen mixed vegetables
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
  3. Stir in tuna and vegetables and continue to simmer for 5 minutes.
  4. Remove from heat and stir in cheddar cheese, Greek yogurt, garlic powder, salt, and pepper.
  5. Transfer mixture to a 9x13-inch baking dish.
  6. Bake for 10 minutes, or until cheese is melted and bubbly.
  7. Serve warm.
