Ingredients
1 cup uncooked quinoa
2 cups chicken broth
1 can tuna, drained
1 cup frozen mixed vegetables
1/2 cup shredded cheddar cheese
1/4 cup plain Greek yogurt
1 teaspoon garlic powder
Salt and pepper to taste
Directions
Preheat oven to 350°F.
In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
Stir in tuna and vegetables and continue to simmer for 5 minutes.
Remove from heat and stir in cheddar cheese, Greek yogurt, garlic powder, salt, and pepper.
Transfer mixture to a 9x13-inch baking dish.
Bake for 10 minutes, or until cheese is melted and bubbly.
Serve warm.
