Ingredients

  • 2 tablespoons canola oil
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger
  • 3 zucchini, cut into 1/2-inch slices
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup water

Directions

  1. Heat the oil in a large skillet over medium heat. Add the garlic and ginger and cook for 1 minute, stirring occasionally.
  2. Add the zucchini and cook for 5 minutes, stirring occasionally.
  3. Add the soy sauce and water. Cover and cook for 10 minutes, stirring occasionally.
  4. Uncover and cook for 5 minutes, stirring occasionally, until the zucchini is tender.
  5. Serve hot.
