Ingredients

  • 1 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup packed brown sugar
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla extract

Directions

  1. In a medium bowl, combine oats, flour, baking powder, baking soda, salt, cinnamon and brown sugar. Stir until combined.
  2. In a separate bowl, whisk together eggs, milk, oil and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a lightly greased griddle or nonstick skillet over medium heat. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook for about 2 minutes, until the edges start to look dry and bubbles form on the surface.
  5. Flip the pancakes and cook for an additional 2 minutes, or until golden brown.
  6. Serve with your favorite toppings.
